
PerSe
This unique project found its roots at the Monasterio del Cristo in Gualtallary in the Uco Valley where they work in conjunction with the Monks. It is located at 1500 meter above sea level and is known for its white chalky soils. PerSe owns two exceptional vineyards here, each split into two parcels. The one vineyeard focuses solely on the Malbec grape, the other has both Malbec & Cabernet Franc. The land is farmed organically and each plot has its own unique qualities. The wines are made in tiny quantities with the smallest yield coming from just 312 vines. They vinify with native yeasts and use minimal intervention in the vineyards and winery. The PerSe team’s winemaking philosphy result in wines that are intense, pure and full of genuine aromas. “The great asset of PerSe lies in the vines who, via small lots of small plot selections, individually give rise to amazing wines.” In the near future they hope to establish a dry-farming winery where nature will take the absolute lead.
The Lines

The wines are intense, pure and genuine aromas, crafted with timely harvested grapes, according to each vintage; wines of fresh, harmonious and balanced flavors that can be aged for a long time but at the same time enjoyed as soon as they are released. The great asset of PerSe are the vines that, in land plot selections -small lots-, individually give rise to their wines. Here, winemaking and ageing – artisanal-styled processes – acquire a secondary role, thus being consistent with our philosophy that less is more.Our work begins in the vineyard, where a non-interventionist viticulture is practiced, and we microvinify small lots in barrels that have been used more than three times, as well as in small untreated concrete vats or in 300-liter open bins. Our mission is to respect each plot of land as it is, not being obsessed with technology or with the overuse of resources, but rather capitalizing the technical knowledge acquired all our experience, and definitively following traditions.
